250 g of roast chicken
70 g of butter
70 g of Gallo wheat flour
600 ml of milk
1/2 teaspoon of ground nutmeg
A pinch of salt
Frying oil
2 eggs
Classic breadcrumbs
Melt the butter in a saucepan. Add the flour and stir constantly for 5 minutes. Let it cool slightly while heating up the milk. When it starts boiling, add to the mixture of flour and butter. Whisk the mixture until it comes off the sides of the saucepan.
Add the sliced roast chicken, salt, pepper and nutmeg. Place in a bowl and let it cool overnight.
To crumb the croquettes, prepare three separate bowls: one with flour, one with whisked eggs and one with breadcrumbs. Shape the croquettes and dip them in flour, egg and breadcrumbs in this order. Let dry and fry. Your croquettes are ready!
